Grilled Pork Chops With Nectarine Salsa

So, let’s talk about this summer. After being pregnant last year and dealing with all that comes with it, this summer feels like a breath of fresh air. No morning sickness, no newborn chaos – just fun in the sun with my two beautiful girls. And you know what that means? Time to fire up the grill and enjoy some seriously delicious eats.

I came up with this pork chop recipe because I had a few nectarines that were on their last legs. Nola decided she wasn't into them, so they were just sitting there, looking sad. But, as any good cook knows, sometimes the best recipes come from necessity. These nectarines have that perfect blend of crunch and sweetness, making them just right for a fresh summer salsa.

Here’s the deal: for this dish, you want a thickly cut bone-in pork chop. Trust me, it’s worth asking the butcher to cut them fresh if you don’t see them in the store. I grilled mine over charcoal to get that smoky goodness, but a gas grill or stovetop works too. If you want that smoky flavor without a grill, a drop or two of mesquite liquid smoke will do the trick.
